Recipe for Living Beyond the Scale in 2017

Running a start up company requires more brain power, energy, confidence, will power, emotional stability and creativity than I could have ever imagined. The work days are long, the hours are crazy and I often don't eat well/regularly, skip me time and don't have time to hit the gym. 

I am eating healthy with Weight Watchers Smart Points Suggested Recipes. The suggested recipe book includes easy recipes for breakfast, lunch and dinner. My favorite one so far is the Prosciutto Flatbread Pizza. I shared the Weight Watchers recipe below and pictures of the final product before I enjoyed it. I substituted arugula for spinach because spinach is my lettuce preference.

Ingredients:

 

Step 1: Pre-heat oven to 450 degrees. Spread tomato pesto paste on 2 whole wheat flatbreads and sprinkle with reduced fat Italian shredded cheese and red pepper flakes. Bake for 6 minutes or until the pizza is crisp and cheese is melted. To make tomato pesto paste I combined 1/8 cup tomato paste and 1/8 cup pesto paste.

 

Step 2: While pizza is cooking, whisk together olive oil, red wine vinegar, salt and fresh lemon juice. Toss with spinach. Thinly slice tomatoes and prosciutto. Grate parmesan cheese.

 

Step 3: Remove pizza from oven. Top pizza with tomatoes, spinach and prosciutto. Finish with a light sprinkle of parmesan cheese. Enjoy! This dish is only 12 SmartPoints but a billion points of flavor!

Fitness: For the days I don't have time to make it to the gym or go on a run I am loving the concept of the new Fitbreak App available in the iOs app store. The app is free to download and use with your Weight Watchers membership. With this app you set your Fitbreak goal each day. Fitbreaks involve doing 1 minute of activity. The app provides suggested fitbreaks like butt kicks, office tricep dips and laundry room choppers. Whether you work full time, are a full time mom or travel, there are Fitbreaks that are tailored to your lifestyle. In order to remember to do my 1 minute fit breaks I set an alarm on my phone every 30 minutes.

Wellbeing/Me TimeI am really bad about carving out time to recharge my wellbeing. This new program is forcing me to think about my personal wellbeing and the time I need to spend to make sure I am not only healthy but happy. Each day I have been carving out 30 minutes to myself to do one of the following: 

Listen to zen music and practice my favorite relaxation yoga poses

Enjoy a bubble bath and catch up my reading my favorite magazines
