Leprechaun Patties

Have you ever wondered what Leprechauns eat? Have your kids ever wondered what Leprechauns eat? Well, if you answered yes to either of those questions, then I have a fun, easy and tasty treat for you (and the kiddos, of course)!
 
Start off by telling your kids a story about how you met a Leprechaun years ago before they were even born. Embellish and tell them that this Leprechaun shared his favorite recipe with you but swore you to secrecy that you would never share the recipe with anyone else until you knew they were ready to handle this huge responsibility and keep the recipe a secret as well. 
 
This will get the kiddos intrigued and will make them feel special that you are sharing such sensitive information with them...hehe. This is what you will need to make these delicious Leprechaun Patties.
  • Ritz crackers
  • Large bag of white chocolate chips
  • Coconut oil (or shortening)
  • Peppermint extract
  • Green food coloring
  • Sprinkles 
  • Peanut butter and marshmallow fluff (optional)
  • Wax paper
Step One:
Start off by melting all the white chocolate chips in a large bowl with 1 tablespoon coconut oil. Microwave for 30 seconds, then mix and repeat this step until completely melted. Then add 1/2 teaspoon of peppermint extract and mix thoroughly. Then add a few drops of green food coloring and mix.
 
Step Two:
Very carefully lay the Ritz cracker down into the melted chocolate and scoop chocolate on the cracker until fully covered. Used a fork to lift cracker out of melted chocolate and lightly tap the fork on the edge of the bowl to allow the excess chocolate to drip off cracker. Lay the cracker on a sheet of wax paper, add sprinkles, then allow to completely cool off before eating.
 
Step Three:
As another option - Make peanut butter and/or marshmallow fluff sandwich crackers and place in the freezer for about 15 minutes to harden. Remove from the freezer and dip into the chocolate mixture and allow to cool on the wax paper. Marshmallow fluff on a Ritz cracker is SO GOOD. It'll change your life.
 
Step Four: 
Keep stored in a dry, cool container or in the refrigerator and enjoy! And make sure your kids promise to keep the sacred favorite food of the Leprechauns a continued secret!
