Waffle Ice Cream Sandwiches

With the official start of summer swiftly approaching, I can't stop thinking about some of the tasty foods that will be flowing at all the Memorial Day celebrations. Growing up, my mom always had ice cream sandwiches for all the kids and every year, I easily devoured about 3 of them. This year at my Memorial Day barbecue, I will be sticking with tradition, however, I will be jazzing them up a bit and serving Waffle Cake Ice Cream Sandwiches! I know you're drooling...it's OK! 
What you'll need:
Waffle Iron
Boxed Cake Mix
Ice Cream
Sprinkles
Step One:
Mix the ingredients as required on the back on the cake mix box. When batter is ready, pour a large scoop into the waffle iron. Repeat as many times as necessary.
Step Two:
After you've allowed the waffles to cool completely, cut them into pieces of four. Sandwich a huge dollop of ice cream between two pieces of waffle and then roll the edges in sprinkles! 
Step Three:
Enjoy! And cover in an air tight container in the freezer for later.
