Brunch is my favorite social meal. I love to make it and I love to enjoy it with friends and family. Egg casserole is one of my brunch staples. It is so easy and you easily experiment with different toppings. I wanted to share one of my favorite combinations that will be a hit with meat and veggie lovers.
- 7 large eggs
- 8-10 sausage links
- 1/2 green pepper chopped
- 1/4 white onion chopped
- 1/4 tomato chopped
- 1/2 cup shredded cheddar cheese
- Pre-heat the oven to 350 degrees.
- Cook sausages on medium heat in a sauce pan until the middles is no longer pink. Remove from the pan (leave the grease in the pan) and cut into 1/2 inch chunks.
- Sauté the onions and peppers in the sausage grease on medium until they are slightly browned.
- Crack 7 eggs in a large bowl and whip with a fork.
- Mix all the other ingredients with the egg. Mix until the ingredients are coated in egg and the mixture is evenly distributed.
- Pour mixture in a 9 inch round glass baking dish.
- Bake for 15-20 minutes or until the egg is no longer wet or the fork comes out clean.
