All of my favorite things in one chocolate-y, salty & sweet, chewy cookie bar…need I say more? These Salted Caramel Chocolate Chip Cookie Bars are a delightfully indulgent treat. I am pretty sure that the first time I made these all of them were gone within just a few short hours, they are that good!
These cookie bars are perfect for your next girl’s night in, bridal shower, or anytime you are in the mood for a unique and irresistible dessert. To “healthify” these a bit, I used whole-wheat flour instead of regular all-purpose, but either will work in this recipe!
Salted Caramel Chocolate Chip Cookie Bars
Ingredients:
- 2 cups whole-wheat flour (or all-purpose flour)
- ½ tsp baking soda
- ½ tsp salt
- 1 ½ sticks of butter, melted
- 1 cup brown sugar
- ½ cup granulated sugar
- 2 eggs
- 2 tsp vanilla extract
- 1 ½ cups chocolate chips
- 1-10 oz bag caramels, unwrapped
- 3 tbsp almond milk, soy milk, or skim milk
- Sea salt for topping
Directions:
- Preheat oven to 325
- In a medium bowl, mix together the flour, baking soda, and salt
- In a large bowl, combine the melted butter, sugars, eggs, and vanilla
- Fold the dry ingredients into the wet ingredients and gently stir in the chocolate chips
- In a microwaveable safe bowl or double boiler, combine the caramels and milk and stir frequently until melted and set aside
- Gently press half of the cookie bar dough into an 11 x 7 pan. Pour the caramel over the bottom layer and then top with the other half of the dough
- Sprinkle with sea salt and bake for 32-35 minutes or until the top begins to turn a lovely golden brown color and the caramel is bubbling through :)
