Salted Caramel Chocolate Chip Cookie Bars

All of my favorite things in one chocolate-y, salty & sweet, chewy cookie bar…need I say more? These Salted Caramel Chocolate Chip Cookie Bars are a delightfully indulgent treat. I am pretty sure that the first time I made these all of them were gone within just a few short hours, they are that good! 

These cookie bars are perfect for your next girl’s night in, bridal shower, or anytime you are in the mood for a unique and irresistible dessert.  To “healthify” these a bit, I used whole-wheat flour instead of regular all-purpose, but either will work in this recipe!

Salted Caramel Chocolate Chip Cookie Bars

Ingredients:

  • 2 cups whole-wheat flour (or all-purpose flour)
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ½ sticks of butter, melted
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 ½ cups chocolate chips
  • 1-10 oz bag caramels, unwrapped
  • 3 tbsp almond milk, soy milk, or skim milk
  • Sea salt for topping

Directions:

  1. Preheat oven to 325
  2. In a medium bowl, mix together the flour, baking soda, and salt
  3. In a large bowl, combine the melted butter, sugars, eggs, and vanilla
  4. Fold the dry ingredients into the wet ingredients and gently stir in the chocolate chips
  5. In a microwaveable safe bowl or double boiler, combine the caramels and milk and stir frequently until melted and set aside
  6. Gently press half of the cookie bar dough into an 11 x 7 pan. Pour the caramel over the bottom layer and then top with the other half of the dough
  7. Sprinkle with sea salt and bake for 32-35 minutes or until the top begins to turn a lovely golden brown color and the caramel is bubbling through :)
