Spinach Pasta Salad with Sauvignon Blanc Vinaigrette Dressing

by Lynn Lilly, Jul 25 2015

I rarely have extra wine after a day or two but when I do, I love using it to make salad dressing. My newest creation is a Sauvignon Blanc Vinaigrette. Today on Atlanta & Company I shared 6 ways ways to use that left over wine including the salad dressing recipe below. Watch the segment here! Some of my other favorite ways to use extra wine is making Wine Gummy SnacksPinot Noir Blackberry Popsicles and a Pinor Noir face mask

  • 1/2 cup olive oil
  • 1/2 cup Sauvignon Blanc
  • 1/3 cup grated parmesan cheese
  • 1 tbsp. dijon mustard
  • 2 garlic cloves, minced
  • 1 tsp. dried oregano
  • 1 pinch of salt
  • 1 pinch of pepper
Whisk ingredients together and toss with spinach, tricolor pasta, cherry tomatoes and bacon! The above recipe makes enough dressing for 3-4 large salads. If you have extra, you can store it in a sealed container in the refrigerator for up to 7 days.
