St. Patrick's Day No Bake Mint Ice Cream Pie

Chocolate chip mint is one of my favorite ice cream favors and Oreos are my favorite cookie so naturally this pie recipe is a match made in easy no-bake heaven! 

 
Ingredients: 
  • 28 whole mint Oreos
  • 6 whole Spring Oreos
  • 1/4 cup of melted butter
  • 4 cups mint chocolate chip ice cream
  • 4 ounces of Cool Whip (half a normal sized pack)
  • 8 inch glass pie dish
Directions: 
  1. Place 28 whole mint Oreo cookies in a zip lock bag and push out all the air. Roll over cookies with a rolling pink to crush them. The final product should be a dirt like mixture. 
  2. Remove 2 tablespoons of crushed Oreos from the bag and set aside. 
  3. Add the melted butter to the crushed cookies in the zip lock bag. Seal bag and mix to coat the cookies.
  4. Press the mixture into the pie dish making about 1/8 inch thick. Once done refrigerate for 1 hour. 
  5. Use an electric mixer to combine Cool Whip and ice cream and mix until smooth. 
  6. Fill the pie crust with the ice cream mixture. 
  7. Take the remaining cookie crumbs and sprinkle on the top. Add the Spring Oreos for decoration.
  8. Place pie in the freezer for at least 1 hour before serving. 
  9. Remove the pie from the freezer about 10 minutes prior to serving.
**You can use this recipe with any flavor of ice cream!
