One of the coolest things about living in Georgia is that I can get home grown Georgia pecans within a short drive away. There are farm stands all over Georgia so you know you are getting quality pecans straight from the source. With April being National Pecan Month, it's no wonder farmers are going nuts!
One of the things I enjoy making with pecans are sesame pecan barks. These homemade goodies are made with sweet, nutty, toasted pecans hugged in soft gooey caramelized honey and toasted sesame seeds. It's so delicious, they'll go fast. In fact, they make perfect homemade gifts for any occasion.
Ingredients
- 3 4 cup sugar
- 1/4 cup honey
- pinch of salt
- 1/4 teaspoon of ground nutmeg
- 1 tablespoon water
- 1 cup toasted sesame seeds
- 1 teaspoon vanilla extract
- 2 teaspoons butter
- 1/4 teaspoon baking soda
- 1 cup toasted pecans halves
Directions
1 Line a baking sheet with parchment paper.
2 In a medium sauce pan, combine sugar, honey, nutmeg, salt and water. Stir on medium heat until the sugar is melted (approximately 5 minutes).
3 When the sugar starts bubbling, add vanilla extract, sesame and butter. Continue to stir.
4 When the butter is completely melted, add baking soda. It will foam up so continue to stir evenly. Turn off the heat.
5 Pour the mixture over parchment paper. Spread the mixture out with a spatula as thin as possible. The mixture cools fast so you have to work faster.
6 Top with pecans. Press the pecans into the sesame mixture.
7 Let it cool completely before cutting in squares with scissors.
