I have to confess, I love potluck dinner parties. I also love sampling the wonderful variety of homemade goodies brought by other guests. Potlucks are such a great idea if you are hosting a gathering and don’t have time to cook. Everyone pitches in and the table is quickly filled with delectable party favorites. It’s a win-win for everyone.
One of my go-to potluck party recipes is the Chorizo Cheese Biscuit Bites. These party bites are great for all kinds of party gatherings. The spicy meat and cheese mixed with buttery and flaky biscuits are perfect for everyone's taste buds. The heat from the chorizo goes deliciously well with the cooling Southwestern sauce. Chorizo Cheese Biscuit Bites
Ingredients:
1 lbs chorizo, casings removed
3 cups all-purpose flour
2 teaspoons chili powder
2 teaspoon garlic powder
1 and 1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground red pepper
1 and 1/2 cups shredded sharp cheddar cheese
1/2 cup chopped green onions
2 large eggs
1/2 cup butter, melted and cooled
Directions:
1. Preheat oven to 375 degrees.
2. In a large bowl, combine flour, chili powder, garlic powder, baking powder and salt. Add cheese, chorizo, and green onions., stirring to combine will.
4. In a small bowl, whisk together eggs and melted butter. Add egg mixture to flour mixture, stirring until dry ingredients are moistened. Shape mixture into 1-inch balls, and place 1 inch apart, on prepared baking sheet. Bake for 15 minutes or until lightly brown.
Serve warm with Southwest Dipping Sauce.
Southwestern Dipping Sauce
1 (16 ounces) container sour cream
1 and 1/2 cups prepared salsa
1 and 1/4 fresh chopped cilantro
Direction: Combine all ingredients. Cover and chill in fridge until ready to serve.
These Chorizo Cheese Biscuit Bites are great for all kinds of occasions. You can eat these straight up or as warm biscuits to accompany family dinner.
