Rice Crispies Easter Nests with Chocolate

We've got a delicious recipe for you that is family friendly and fun to make! These Rice Crispies Easter Nests are the perfect twist to the traditional treats that we grew up loving. What I love about these Rice Crispies Easter Nests is that they're so festive and they're topped with adorable easter egg colored chocolate candy!

Rice Crispies Easter Nests with Chocolate

You will start these treats by heating 2 tablespoons unsalted butter in a large pot. Add 1 (10-ounce) bag of marshmallows and stir often until the marshmallows have dissolved. I like to add a drop of vanilla extract at this time. You will turn off the heat and then add about 6 cups of Rice Crispies cereal and stir stir stir! 

It might take a few minutes until the marshmallows and rice crispies are fully mixed together but don't worry it doesn't take long!

At this point you will spoon some of the rice crispies mixture into a greased muffin tray. Once you place the mixture into the greased muffin tray, you can start by pressing the mixture further into the cup with your hands and creating a "nest". If the mixture becomes sticky and hard to mold, you can grease your hands with coconut oil (if you have it) or butter, and it will make the molding easier.

From here the assembly is quite easy. Top each of the Rice Crispies Nests with coconut shreds (dyed with food coloring) and your favorite easter egg colored candy. These were made with Reese's eggs, but any of the pastel candies will do!

How fun and festive are these?

Ingredients:

2 tablespoons unsalted butter
1 (10-ounce) bag of marshmallows
6 cups Rice Crispies cereal 
1 drop vanilla extract 
1 cup shredded coconut
green food coloring 
Instructions:
  1.  Spray a muffin tray with nonstick cooking spray or coconut oil spray. Set aside. 
  2. To make the "grass" of the Easter nest- add shredded coconut to a bowl and add a couple of drops of green food coloring. Stir to combine until the coconut becomes desired green color. Transfer to a plate and spread evenly to dry the coconut. 
  3. Melt butter in a large pot over medium heat. Add marshmallows and stir about every 30 seconds for 3-4 minutes, or until marshmallows have melted. Add a drop of vanilla extract and stir. Turn off heat. Add rice crispies cereal and stir until cereal and marshmallow mixture are fully incorporated. 
  4. Spoon mixture into each of the muffin cups until almost full. Use hands to press rice crispies mixture into each of the muffin cups and make a small indention in the middle of the "nest". Top with coconut flakes and pastel colored candies.
