Road trips are one of my favorite things about traveling. The unlimited stops, talking, laughing and snacking makes the experience so much fun. This summer, I'm hitting the road. There are three types of summer road trip snacks I like to take with me.
Healthy Veggie & Dip
This snack is great if you are watching your figure while heading to the beach. This low calorie snack is tasty and guilt-free so munch away. Fill the bottom of a cup with fat-free dressing. Cut fresh veggies like carrots, cucumber and celery to stand in the cup. Use cling wrap to seal in the freshness. Place this in a small cooler so you can snack in the car. The convenient package makes it easy to eat and mess-free.
Homemade Beef Jerky
When traveling through the countryside, I love a tasty jerk snack. The gas station beef jerky is always too salty and fatty for my taste. I definitely don't want to feel bloated in the car either. I like to make my own tasty and healthier beef jerky before I hit the road. Now you can too!
Ingredients:
1-2 lbs flank steak, sliced thin
1/2 cup soy sauce
1/2 cup honey
1 teaspoon oil
3 cloves garlic, minced
1/2 teaspoon salt
1 teaspoon black pepper
toasted sesame seeds
Direction:
Marinade flank steak with all ingredients except sesame seeds. Refrigerate it over night. When you are ready to bake it, set the oven on bake at 175 degrees Fahrenheit. Drain the sauce and dab the moisture out of the beef strips. Lay the beef strips on a rack. Put a deep oven tray under the rack to catch the fat while cooking. Slow bake the beef in the oven for 3- 4 hours. The thicker the beef strips the longer you bake. When done, sprinkle the toasted sesame seeds on both sides of the beef jerky. Let it cool. Beef should be dry but sticky from the glazed honey. It's so amazing!
To-Go S'mores
Don't forget to pack something for that sweet tooth. Candy and chocolates are always great on the road but my favorite snack is to-go s'mores. How do you pack s'more? Well, it requires pre-melting milk chocolate and layering ahead of time. This to-go version of s'mores are great cold. it's perfect for sharing too. If you happen to have some leftovers when you arrive to your destination, don't forget to toast these babies up by the bon fire!
Ingredients:
half a bag of milk chocolate morsels
square Jet Puff Marshmallows
Graham Crackers
Directions:
Heat the chocolate in the microwave for 30 seconds. Stir and heat again for another 30 seconds. Repeat one more time. Stir well to make sure the chocolate is melted and smooth. Break graham crackers in half. Cut the square marshmallows in half but long way. If you prefer the whole marshmallow, more power to you! Spread the graham cracker with melted chocolate and top it with the half marshmallow smooth side facing up. Place the s'mores on a tray and freeze it for 10 minutes. Place cold s'mores in a zip-lock bag and store it in the cooler while you're on the road. Enjoy!
