Summer is in full swing, and between work, play dates, and pool fun, I don't want to spend hours in the kitchen! When
Old El Paso reached out to partner and share an easy Summertime meal for busy moms I was in for so many reasons! First, I have had a long time obsession with taco shells! We have taco night at least once (if not twice) a week at my house, and second, I love to keep the leftover shells to snack on at work the next day. I love
Old El Paso
taco shells so much that my team members bought me boxes of them for my birthday so that I could have them in the office as a snack on the regular. Lily has definitely taken on my love of taco shells. She was munching on them with me at studio today!
When it comes to Summer taco night I like to keep it easy and head to Walmart to pick up Old El Paso Stand N' Stuff Shells, 10 Count, Old El Paso Traditional Refried Beans, Old El Paso Taco Seasoning and Sauces plus everything to create three easy tacos! Walmart makes it so easy to order online and pick up at the store. Talk about a busy mom win!
My daughter goes back and forth between loving chicken and then only wanting to eat veggie tacos, and my husband and I are die-hard beef taco fans. So, we typically go with three easy DIY tacos to keep everyone happy and have leftovers! We always have chicken, beef, and refried beans as the base and then have a variety of toppings that can mix and match with any of the bases like corn, avocado, onion, bell peppers, lettuce, rice, and of course cheese. For the beef, I always season it with the Old El Paso Mild Seasoning packet and for the chicken, I like to grill it in the grill pan finish it by tossing it in Old El Paso Taco Sauce for a delicious flavor.
If you can cook the beef, chicken, and beans at the same time and get your veggies pre-chopped at Walmart, you can have a fun family meal in less 30 minutes!
Because it is summer, I like to add some fun colorful decorations to the table, but I keep it simple by letting anyone eating with us make their own tacos. It also makes it easy to clean up because you can just wrap up the ingredients in their containers.

Lily totally gets into taco night! As soon as she saw the box she snagged it from me!
