Nutella Espresso Chocolate Chip Cookies

by Lynn Lilly, Mar 07 2015

Nutella is certainly a guilty pleasure of mine. That rich, smooth, velvety chocolate that just melts in your mouth—you can’t beat it. I especially love it in the morning, on toast, with coffee. So I thought, why not combine the two? So there you have it, Nutella Espresso Cookies.

Not only are these cookies delicious, but they are also super easy. They require few ingredients, and come out perfect every time. If you like to bake, you have probably figured out that cookies can be really finicky. Sometimes they come out beautiful, other times you wonder what in the world went on in that oven. But these…these cookies are just as beautiful as they are tasty.

Ingredients:

  • 1 cup nutella
  • 1 tbsp. brown sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1/2 cup all purpose flour
  • 1 tbsp. instant espresso powder
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup dark chocolate chips

Preheat the oven to 350 F. Combine the first four ingredients in a bowl (nutella, egg, vanilla extract, and brown sugar) with a hand mixer on low speed. When fully blended, add the flour, espresso powder, baking powder, baking soda, and salt. Using the hand mixer, blend together. Next, fold in the chocolate chips. Prepare a baking sheet by covering it with parchment paper. Using a cookie scoop, scoop the dough onto the baking sheet. Bake at 350 F for 10 minutes. Remove, let cool, and enjoy!
