Mediterranean Quinoa Salad

Looking for new ways to spice up your lunch during the week? This Mediterranean Quinoa Salad is a fresh and nutritious way to add some flavor to your midday meal. I am pretty much obsessed with all of the yummy flavors and textures in this quick & easy salad: quinoa + spinach + sundried tomatoes + feta + balsamic vinaigrette= SO DELICIOUS! If you have never had quinoa before, it is a nutty, chewy, and high protein source of whole grains and is extremely versatile! I love incorporating it into all sorts of dishes as it easily takes on flavor and pairs well with so many ingredients. I am a firm believer in flavorful, exciting recipes: healthy eating should not be boring! 

Mediterranean Quinoa Salad

Serves 4

Ingredients

  • 1 cup uncooked quinoa
  • 1 1/2 cups spinach, chopped
  • 1/3 cup sun dried tomatoes
  • 1/2 cup crumbled feta cheese
  • 1/4 cup balsamic vinaigrette
  • 1/2 tsp salt
  • 1/2 tsp black pepper 

Directions

1. Cook quinoa according to package directions. 

2. In a large bowl, mix quinoa, chopped spinach, sun dried tomatoes, feta cheese,  balsamic vinaigrette, salt, and pepper. 

3. Refrigerate and serve cold.


If you wanted to turn this salad into a complete meal, you could also add some shredded chicken or chickpeas. One of my favorite ways to serve this dish is over a bed of spinach with some chickpeas (aka garbanzo beans) thrown in to add some extra veggies and protein to my lunch!
