20 Minute Caprese Pasta

by Lynn Lilly, Feb 07 2016

Tomato, basil, and mozzarella: one of our absolute favorite flavor combinations. As spring is quickly approaching (yay!), We have been in the mood for some fresh, healthy pasta dishes packed with crisp flavors and herbs. This Caprese pasta most DEFINITELY makes the cut. We would eat this every day if you let us! :)

Although Caprese is usually served as a salad of fresh tomatoes, mozzarella, fresh basil and a drizzle olive oil, I transformed this simple salad into a delicious main meal and added balsamic vinegar for a little extra kick of flavor. This dish is gorgeous, simple, and can be prepared in 20 minutes or less!

To make this dish a much healthier choice than traditional pasta dishes, I used whole wheat pasta, a low fat mozzarella cheese, and fresh herbs and vegetables in place of high calorie "extras," so this recipe is both nutritious AND tastes delicious!
