Tomato & Caramelized Onion Pastry Puffs
Ingredients:
- Pastry Puff
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 onion sliced
- 1 egg stirred with one tablespoon of water
- 2 large tomatos
- Basic chopped
- 1/2 cup light Italian shredded cheese
- circular cookie cutter
- Salt & Pepper
Directions:
- Melt butter with olive oil and add onion. Caramelize for 20 minutes
- Pre-heat oven to 425
- Slice tomatoes
- Use cookie cutter to stamp the pastry puff
- Brush pastry with the egg mixture
- Top with tomatoes, caramelized onions, basil, cheese and salt and pepper
- Bake for 15 minutes or until pastry puff is slightly golden brown
