It's comfort food season! Time to pull out the winter recipes for all those delicious foods that give you the warm fuzzies. Just a few small tweaks can turn yummy comfort food into a healthier dish that your waistline will appreciate.
This is what you'll need:
- 4 chicken breasts
- Salt & pepper
- 3 tablespoons olive oil
- 12 oz bag or bigger of mixed frozen vegetables (carrots, green beans, corn and peas)
- 1/4 cup all purpose flour
- 2 1/2 cups 1% milk
- 2 Crescent roll dough
Step One:
Preheat oven to 375 degrees. Place chicken breast on baking sheet and sprinkle with salt and pepper. Bake accordingly until chicken is white in the center, roughly 30 minutes. Let cool, then cut in small cubes or shred.
Step Two:
While chicken is cooling, heat 3 tablespoons of olive oil in a large saucepan over medium heat. Add frozen veggie mix and season with salt and pepper. Cook until vegetables are crisp-tender for about 8-10 minutes. Add flour and cook, stirring for 1 minute. Then slowly and gradually add the milk while stirring until smooth. Continue to cook and stir occasionally until mixture thickens.
Step Three:
Remove from heat, add chicken and mix. Lay out one roll of the crescent roll dough and then lay out chicken mixture over the dough. Next, lay the second roll of dough on top of the mixture and seal the sides with a fork. Use a knife to cut into squares prior to cooking. Then place in the oven and cook for 10-15 minutes until crescent turns golden brown.
Step Four:
Let cool, cut and enjoy!
