It's time for this week's surprise dinner. This week I was working with 3 boneless chicken breasts, 3 pieces of thick uncooked bacon, 3/4 bottle of jalapeno mango barbecue sauce, 1 wheat beer, sliders and pickles. I was really busy today and didn't have time to get crazy with the recipe so I relied on my slow cooker.
- 3 boneless chicken breasts
- 3 pieces of thick cut uncooked bacon
- 12 ounces of barbecue sauce (you can use any variety)
- 1 wheat beer (12 ounce)
- 6 slider buns
- 2 pickle spears
- Place chicken breasts in the slow cooker
- Cut the bacon into 1 inch pieces and place in the slow cooker
- Pour the barbecue sauce and beer over the chicken and bacon
- Slow cook for 6 hours on low
- After slow cooking for 6 hours remove the lid from the slow cooker and shred chicken with two forks. Once all chicken has been shredded replace the lid and slow cook for 30 more minutes to allow the chicken to soak in the remaining barbecue sauce and beer mixture.
- Serve on sliders and garnish with pickle chunks
- Enjoy with your favorite sides. I served with corn on the cob and pasta salad.
