This spring, clean eating is just as important as spring cleaning. After all, we're still working on fitting in that swimsuit for spring break. It's only fitting that I share my healthy and delicious chicken avocado spring rolls with plum hoison dipping sauce.
This recipe is inspired by my Vietnamese heritage and influenced by my American way of eating fresh, vibrant and healthy food. The rice paper wrapped spring roll is the perfect meal to keep that weight down and still enjoy fresh, tasty food.
This is so easy to make that you'll want to wrap all your favorite veggies and proteins and call it a meal. Let's get started.
Chicken Avocado Spring Rolls
Ingredients:
Dried rice paper
Rotisserie chicken, shredded
Avocado, thinly slided
Red cabbage, thinly sliced
carrots, shredded,
Cilantro
Plum
3 tablespoons hoison sauce
Instructions:
1. Peel the plum and remove the pit. Blend the plum with 3 tablespoons hoison sauce and 3 teaspoons water. Blend until the sauce is smooth. Set aside.
2. Dip the dried rice paper in warm water and lay flat on a cutting board. Add red cabbage in the middle of the rice paper. Layer on carrots, chicken and cilantro.
3. The rice paper will soften. Wrap the spring roll by folding the bottom up. Then lay on the sliced avocado. Fold in the sides for the rice paper. Roll the rest of the spring roll up.
4. Repeat steps 1-3 for as many rolls as you like. Slice the rolls in half at an angle. When you're ready to eat, dip the rolls in the plum hoison sauce. Add Sriracha sauce if you like a little kick to your spring roll.
This meal is like a salad in a roll. Check out the colorful freshness you'll only find in a salad. It's easy to make if you have leftover chicken or spring.
