The new year is in full swing and I am still working on meal prep and here is the latest delish recipe in partnership with Georgia Beef Board! This recipe is so flavorful, quick to prepare and preps so well for at least 3 meals!
Ingredients:
- 1 lbs Fajita Beef
- 2 cups Bell Peppers
- 1 ½ Broccoli Chopped
- 1 ½ Snap Peas
- ¼ Diced Onion
- 1 cup Sliced Carrot
- 1 tbsp Minced Garlic
- Sesame Seeds
- Salt and Pepper
- 1 Pack Udon Noodles
- 1 Cup Stir Fry Sauce
Directions:
- Season beef with salt, pepper, and garlic
- Sear beef on high till the desired temp. Add stir fry sauce 1/2 way through cooking
- Take out beef add onion, bell peppers, carrots, and broccoli. COok for 6 mins stirring occasionally
- Add cooked udon noodles.
- Stir until mixed
- Plate noodles and veggies, place beef on top
- Garnish with sesame seeds
- Prep into individual containers and refrigerate or freeze. When ready to eat warm in a skillet or microwave.
