Homemade Pina Colada Mocktail
Having a nice cold drink on a hot day is one of the best parts of summer! Being pregnant in the summer, however, is a different experience than most. Pregnant women don’t handle the heat as well, and to make matters worse, cannot have that glorious cocktail that would make the day so much nicer!
Enter the mocktail!! That’s right, a cocktail without the alcohol. One of my favorite indulgences in a Pina Colada. I love the creamy taste from the coconut and sweet tang from the pineapple. It is so refreshing! The addition of rum really sets it over the top, but since I am dealing with a summertime pregnancy, no rum this summer.
When making this Pina Colada Mocktail, make sure to add lots of ice! That is what will help to make it nice and thick. When it comes to a sweetener, you have a couple options. You can either use a simple syrup, which is equal parts water and sugar cooked together until the sugar is dissolved, or you can use honey. I have tried this with both, and both taste great. The reason I add a sweetener to this mocktail is because I use unsweetened pineapple juice. If you can only find sweetened pineapple juice, then I recommend tasting it before adding any other sweetener.
Makes 2-3 drinks
Ingredients:
8oz unsweetened pineapple juice
8oz coconut milk (not coconut water)
the juice of one or two limes; start with one and add more depending on how tart you like
lots of ice!
1/4-1/2 cup simple syrup or honey
Directions:
1.Pour the pineapple juice, coconut milk, and lime juice into a blender
2.Add in some ice and blend
3.Taste, then add simple syrup or honey to the taste you like
4. Add more ice if you want it to be thicker
5. Blend until smooth
6. Adjust flavors to your taste; you can add rum if you are looking to make this a cocktail
